Camping Recipe: Fireside Chickpea Curry

Ingredients

  • 1 tbsp vegetable oil
  • 1 small onion
  • 1 tbsp Garam Masala
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • ¼ cayenne pepper
  • 1 tsp salt
  • 2 tbsps tomato paste
  • 1 (14 oz) can coconut milk
  • 1 (14 oz) can chickpeas, drained
  • 1 lime, cut into wedges
  • Fresh cilantro
  • ¼ c. Greek yogurt

Instructions:

  1. Wash and dry all your produce.
  2. Dice the onion. Cut the lime into wedges and set aside. Chop the cilantro for topping.
  3. In a medium pot, heat a drizzle of oil and stir in the onions. Saute until translucent and beginning to brown. 
  4. Toss in the Garam Masala, turmeric, ground ginger, cinnamon, and cayenne. 
  5. Stir until fragrant before pouring in the coconut milk and tomato paste. 
  6. Drain the chick peas and dump them into the pot.
  7. Cook over medium-low to medium heat, stirring to help the sauce thicken. Approximately 10-15 minutes.
  8. Serve over rice with a lime wedge, a dollop of Greek yogurt, and fresh cilantro.
